Doria is Japanese comfort food inspired by gratin; using cooked rice makes it practical for leftovers.

Ingredients

  • 700 g cooked rice
  • 400 g boneless chicken thigh (diced)
  • 200 g mushrooms (sliced)
  • 1 onion (diced)
  • 40 g butter
  • 40 g plain flour
  • 600 ml milk
  • 1 tsp chicken stock powder
  • 160 g mozzarella cheese (grated)
  • 40 g Parmesan (grated)
  • 1 tbsp neutral oil
  • 0.75 tsp salt
  • 0.5 tsp black pepper

Step-by-step method

  1. Heat the oven to 200°C conventional or 180°C fan and lightly grease a baking dish.
  2. Heat the oil in a frying pan and cook the onion, chicken and mushrooms for 7–8 minutes until the chicken is cooked and the mushrooms have released their moisture.
  3. Melt the butter in a saucepan, stir in the flour and cook for 1 minute.
  4. Add the milk gradually while whisking, then add the stock powder, salt and pepper. Simmer until the sauce thickens enough to coat a spoon.
  5. Spread the cooked rice in the baking dish, top with the chicken mixture and pour over the white sauce.
  6. Scatter with mozzarella and Parmesan and bake for 18–20 minutes until bubbling and golden.
  7. Rest for 5 minutes before serving so the layers settle slightly.
