A short miso marinade brings savoury sweetness to the salmon, but wiping away excess before broiling prevents scorching.

Ingredients

  • 4 salmon fillets (about 160 g each)
  • 3 tbsp white miso
  • 2 tbsp mirin
  • 1 tbsp sake
  • 1 tbsp sugar
  • 1 tsp soy sauce
  • 1 tsp sesame oil
  • 2 spring onions (sliced)
  • 1 tbsp sesame seeds (optional)

Step-by-step method

  1. Mix the miso, mirin, sake, sugar, soy sauce and sesame oil until smooth.
  2. Coat the salmon lightly with the marinade and refrigerate for 30 minutes to 2 hours.
  3. Heat the oven grill or broiler to high and line a tray with foil.
  4. Lift the salmon from the marinade and gently wipe off thick excess so the miso does not burn before the fish cooks.
  5. Broil for 8–10 minutes, depending on thickness, until the surface is caramelised and the salmon flakes easily.
  6. Rest for 2 minutes. The centre should remain moist rather than dry.
  7. Finish with spring onions and sesame seeds and serve with rice and greens.
