Jasmine Milk Tea
Fragrant jasmine milk tea made with strongly brewed jasmine tea, milk and a light touch of sweetness, served hot or over ice.

Jasmine tea can turn bitter if steeped too long. Brewing it strong but briefly gives enough flavour to stand up to milk without losing the floral aroma.
Ingredients
- 4 tsp jasmine green tea leaves
- 700 ml water
- 300 ml whole milk (or unsweetened oat milk)
- 3 tbsp sugar or honey (adjust to taste)
- 3 cups ice cubes (if serving cold)
- 2 tbsp condensed milk (optional for a richer version)
Step-by-step method
- Bring the water to about 85°C rather than a rolling boil. If you do not have a thermometer, boil the water and leave it for 2 minutes before using.
- Place the jasmine tea in a heatproof jug and pour over the hot water. Steep for 3 minutes only, then strain out the leaves so the tea does not become bitter.
- While the tea is hot, stir in the sugar or honey until dissolved. Add condensed milk now if using.
- For hot milk tea, warm the milk gently in a saucepan until steaming but not boiling, then combine it with the brewed tea.
- For iced milk tea, cool the brewed tea for 10 minutes, then stir in the cold milk.
- Taste and adjust the sweetness. Remember that a drink served over ice will taste slightly less sweet once diluted.
- To serve cold, fill glasses generously with ice and pour in the jasmine milk tea. Serve immediately so the floral aroma stays fresh.
