Mango Fattoush Salad
Bright fattoush-inspired salad with ripe mango, toasted pita, cucumber, tomato and sumac dressing.

Sweet mango adds a tropical note while sumac, lemon and crisp pita preserve the tart, crunchy personality of fattoush.
Ingredients
- 2 pita breads
- 1 ripe mango, diced
- 1 cucumber, diced
- 250 g tomatoes, chopped
- 1 small red onion, thinly sliced
- 1 romaine lettuce, chopped
- 3 tbsp parsley, chopped
- 2 tbsp mint, chopped
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 1 tsp sumac
- 0.5 tsp salt
Step-by-step method
- Heat the oven to 200°C conventional or 180°C fan, tear the pita into bite-size pieces and toss with a few drops of olive oil.
- Bake the pita for 6–8 minutes until crisp and lightly golden, then cool completely.
- Combine mango, cucumber, tomatoes, red onion, lettuce, parsley and mint in a large bowl.
- Whisk olive oil, lemon juice, sumac and salt until the dressing looks slightly emulsified.
- Pour the dressing over the vegetables and toss gently so the mango pieces remain intact.
- Add the toasted pita only immediately before serving and toss once or twice.
- Taste for acidity and serve straight away while the pita is still crunchy.
